Salmon Potato Rolls

Made this simple Salmon Potato Rolls for dinner. Gene and Ni were delighted. This is a modified recipe of Salmon Potato Patties.



Salmon Potato Rolls

Yields 16 rolls

Ingredients:
400g potatoes
1 can salmon (185g), drained & flaked
2 tbsp oil
1/2 tsp garlic, chopped
75g big onion, chopped
2 tbsp spring onion, chopped
2 tbsp coriander leaves, chopped
1 red chilli, seeded and chopped
Oil for deep-frying

Seasoning:
¼ tsp salt
¼ tsp black pepper
½ tsp curry powder

Coating:
1 egg, lightly beaten
1 cup breadcrumbs


Method:

Boil potatoes till cooked. Peel and mash the potatoes.

Heat oil in a non-stick pan and fry garlic and onion till lightly brown. Dish out and leave to cool then add to the mashed potato. Add salmon and stir in the seasoning. Mix well.

Add spring onion, coriander leaves and chilli. Combine well and shape into longish rolls.

Dip into beaten egg and roll in breadcrumbs.

Heat oil till hot and deep-fry the rolls until golden brown.

Drain on absorbent paper. Best served hot.

  5. ooooo tazz, i simply love this one!! i can actually smell it from here haha. what good imagination i hv hehe. i love anything croquette, so i'm gonna try this out soon. however my hubby doesnt like salmon, so i might substitute with other stuffs like tuna =) thx for the recipe tazz!
